You are NOT losing your mind.
Get an appt with another ENT. It sounds like you have an inner ear problem, but you may have to go thru some other tests to rule out other problems. These cannot be seen by looking in the ear, the inner ear is not visible. It could be anything from some sort of upper respiratory or sinus infection to a more serious inner ear problem. I have something called Menier's disease and the symptoms are very similar, BUT don't jump to conclusions. Most inner ear problems have similar symptoms and some are very easily cured. With the full feeling in the ear it could be a problem with the etruscian (sp?) tubes. At a minimum there are easy treatments for the problem that work for a lot of people. While you are waiting for the ENT appt you can try a low sodium diet (no harm in trying :D), and get some Dramamine. It's over the counter and you should be able to find it at any drugstore. You might also want to try an OTC antihistimine, either Claratin or Zyrtec. It could help clear up the full feeling. Personally Zyrtec works best, but you can try both and see if either helps. Please post back if you have questions, I know how this is. It took me months before I found my current ENT and got proper treatment.
